#1 Yeah, the leftover women (shengnu) have incredibly high standards and demand a ridiculously high price. The few men out there who meet her standards would never want a crazy shengnu for a wife. So, they're left to stew in their own juices. I know a story where a couple broke up before the wedding not because the man didn't own an apartment, he wouldn't sell and then buy a newer, more expensive apartment that was closer to her parents.
A lot of them would rather have no husband rather than a lesser husband. So be it!

#3 The word for this phenom is hypergamy. The Chinese reinforce it by requiring that the groom pay a bride price to the bride's parents. For some of these women, I have to wonder if the bride price runs into the millions.
