#5 I wasn't there but I saw the local TV broadcast of the protesters. It was hardly "hundreds", maybe 100. They were peaceful so I don't care if they march and defy Dewine.
Problem is, last time they marched a black kid murdered a white college student at a frat party the following weekend.

Good to know, Thimp Clusort2035. Thank you. I’m still recovering from turning ten pounds of potatoes into latkes during the early part of the week... and it looks like I’ll have to repeat the exercise tomorrow, as over three quarters have already been eaten. Even Mr. Wife, who claims to dislike them, has been helping himself to my freezer stash.

#13 My mother regards cooking as a duty rather than a pleasure, Besoeker. When I was a child, she used to open a can of Manischewitz potato latke mix, slicing the things directly into the pan. (Manischewitz no longer sells this option, for good reason.) I had no idea there was anything better until I was exposed to homemade ones when the trailing daughters were young, at which point I started looking at recipes. This is the recipe I finally settled on:

Chef Harry Rubenstein’s Hanukkah Latkes
5-6 large Russet potatoes, peeled (5 lb.)
~2 cups neutral oil (canola, grapeseed – NOT olive)
2 medium onions, peeled
3 large eggs
1/4 cup breadcrumbs, matzah meal, flour (can be gluten free), or potato starch
2 tsp baking powder
Salt and freshly ground pepper, to taste
Topping of your choice (applesauce, sour cream, etc.)

Line a large sieve with cheesecloth or kitchen towel; place sieve over a large mixing bowl, then set near grating station. Next to the stove, cover a layer of newspaper with paper towels. Set more newspaper and paper towels near at hand for additional layers.

Using a box grater or food processor, grate together potatoes and onions, alternating to mix shreds. Add grated potato mixture to sieve, then sprinkle with salt to encourage fluid release, stirring to distribute. When all the potatoes and onions have been grated, pull up cheesecloth/kitchen towel to squeeze moisture out of potatoes. Let starch settle out, about 5 minutes, then pour off liquid, leaving the potato starch at the bottom of the bowl. Stir in bread crumbs and baking powder. Whisk eggs to combine, then mix into the potato starch mixture. Finally, stir in the grated potatoes.

Set a large frying pan over medium-high heat, then pour in oil to ¼” depth. Heat until oil is shimmering, about 360F degrees on a candy/deep-fat thermometer. Stir potato mixture, then dip out a scant ¼ cup (50 ml) if want large pancakes, or a heaping tablespoon (30 ml) if want small, for each latke. Do not crowd in pan. Fry latkes until golden brown on bottom before turning over, about 3 minutes per side. When golden brown on the second side, remove from pan to let drain on a thick layer of newspaper covered with paper towels. Stir potato mixture again before dipping out the next set of pancakes. Add more oil to pan as needed. When paper towels are covered with latkes, sprinkle with a pinch of salt and freshly ground pepper to taste, cover with another layer of paper towel and another section of newspaper, then another layer of paper towels on which to lay the next layer of pancakes.

If not serving immediately, let cool to room temperature. If to be served within 4 hours of making, keep covered at room temperature; otherwise, spread on cookie sheets to flash freeze, then store in freezer bags. Reheat in 375F oven until hot and crisp.

Traditional condiments are sour cream (or substitute plain Greek yoghurt) and applesauce. Apparently Ashkenazi Jews have been arguing for generations over which one is correct, but I like both.
