I suspect we're already undergoing a high-statistics experiment on the transmissibility of CWD. There are lots of licensed deer hunters, and some fraction of them have eaten un-detected CWD venison--more in places like the UP where off-season diet supplementing is common. If you assume a decade incubation period, we should see a significant uptick in this kind of brain disease cases by now.
