#9 TW, when I make tzatziki, I use cheese cloth and two colanders, one to let the fluid out of the yogurt and lined with the cheese cloth and one to let the fluid out of the shredded cucumber (no cheese cloth). I let them sit in the fridge overnight and do their thing. I think the thicker the tzatziki the better. Anything else is certainly one's personal preference. But IMO, getting the water out is key. Oh, and a black/kalamata olive wouldn't hurt. |

It tastes better if you pay a three figure sum for the meal There is plenty of research that shows the belief in that correlation. Amusing, when one has done some of that research. Still, larger sums do buy posher surroundings, and sometimes better trained serving staff. Or at least showier — the Maisonette in Cincinnati was the highest rated restaurant in North America for four decades, but probably one of the reasons they finally closed was that they provided the same level of service with a very different attitude to their regulars versus the rest. |

TzatzÃki (Cucumber Yoghurt soup/dip) From Cooking the Greek Way by Anne Theiharous (1986) Serves 4 Prep time 10 minutes 1 large cucumber, peeled and finely grated 2 cups (500ml) plain yoghurt 1 Tbsp (15 ml) olive oil 3/4 Tbsp (10 ml/2 tsp) wine vinegar 1/4 tsp salt or to taste 1/2 tsp fresh mint leaves, minced 1 small clove garlic, crushed chopped fresh parsley for garnish Stir together all ingredients except cucumber and parsley. Stir in cucumber, then chill at least one hour. Garnish with chopped parsley and serve. |

#3 This time I side with Tajikistan because sound like my favorite sauce for lamb and roasted chicken… tzatziki sauce. I love tzatziki sauce! Just reserved a table for two and a cold bottle of Assyrtico at Taverna Tony People should eat and drink not fight. PS it’s also cheaper then divorces….. |
